Signature Cocktails

Red Skyline
Fruity . Floral . Refreshing
During 2021, while watching the red skyline over Reykjavík cast by the Fagradalsfjall eruption, the idea for this cocktail was born.
The vision was to create a drink as vivid and striking as that unforgettable sky.
To achieve it, we turned to one of the most brilliant culinary pairings — strawberries and balsamic — layering them with lavender and grapefruit for a floral, refreshing finish.
The result is a cocktail that glows with the same intensity as that extraordinary night.

 

 

 

 

 


Fjord Gimlet
aka “Iceland in a Glass”
Fruity . Smoky . Vibrant

Also known as “Iceland in a Glass,” this cocktail was first created as a challenge: to capture the flavor of the land of Ice and Fire for the Monaco Grand Prix.
Blueberry richness, Arctic thyme in syrup and smoke, and the crisp edge of lemon come together in a drink that tastes as wild and untamed as the island itself. Simple yet multilayered, it is a paradox in a glass — just like Iceland, the beautiful land we call home.

 


Pure Dill-ight
Herbal . Tropical . Bright

Scandinavians descend from Vikings, exploring and carrying their culture across distant shores is still in their blood.
This cocktail imagines a modern traveler venturing into the Indian Ocean, bringing dill from home and discovering the abundance of mango and lemon abroad. United by Pure Gin, these flavors form a bright, herbal, and unexpected marriage of worlds. A drink that celebrates curiosity, adventure, and the joy of discovery.

Monaco Grand Prix
Fruity . Herbal . Elegant
Created for the Monaco Grand Prix 2022, this cocktail was first mixed from the deck of a yacht moored at the chicane in Monte Carlo. Inspired by the elegance of Provence and the glamour of Monaco, it blends fig and rosé Mediterranean flair with the crisp refreshment of gin and lemon. Perfect for a radiant May afternoon at the race — or casually at Terroir, where it carries those same great vibes and memories.


PURE Passion
Exotic . Sparkling . Smooth

Designed at the request of a bride-to-be in the height of her happiness, this cocktail was born from her only wish: “I love sparkling rosé and passionfruit.” Tropical passionfruit meets the refined sparkle of rosé Prosecco, lifted by bright lime and a touch of vanilla. Playful, elegant, and smooth, it’s a drink made for celebrating life’s best moments, whether oceans away or right here at Terroir.

 


The Mercedes
Fresh . Silky . Aromatic . Sour
This cocktail was first created in Reykjavík in 2014, during the intensity of a crowded nightclub where guests would ask for the legendary “Raúl Special” — a drink invented on the spot, every night,
under pressure and without excuses.
Out of that ritual came a moment of brilliance:
a silky, balanced cocktail that
immediately stood apart.
The guest who ordered it worked at Askja, the Mercedes-Benz representative in Iceland. After one sip, he insisted on naming it himself, and so The Mercedes was born. Ever since, it has remained a symbol of precision, finesse, and timeless elegance — just like its namesake.



Terroir Negroni
Rich . Smooth . Complex

A house signature that reimagines the classic Negroni with deeper layers of character. First introduced during Negroni Week 2024, it was our way of honoring a cocktail beloved by connoisseurs, chefs, and bartenders — the true insiders of the craft.

Ours carries a distinct Terroir flair: Campari infused with our own house-dried red berries for freshness and fruit, Ruby Port as a nod both to wine and to the Portuguese heritage at our bar, and a slow maturation in oak casks — rum and American oak — to deepen its layers over time. The result is velvety, complex, and unmistakably ours. A Negroni rooted in place, patience, and craftsmanship — Terroir in a glass.
